How can I tell which port Eudora should access the SMTP and POP servers?

Not only the ports can be changed. You can gain access to all kinds of advanced features using this.

Move the file esoteric.epi from the folder extrastuff (in the Eudora directory) to the main Eudora directory (the one with eudora.exe) and go to Tools->Options. There you can find Ports and use that to change the default POP, SMTP ports, etc..
